I figured it out on my own when I was 13...
Here is the link to the SFS extractor:

Open up the archives one by one and search for .TGA files from the plane you want. You will see the plane name on the folders in left column. Hope this helps you to get started.

Once edited, how do I put the files back in the .sfs file and overwrite them?

When you look at the sfs in the sfs extractor, you will see the folders it is in. Are you making sounds or
textures? For images it is like il2\mods\you_mod_name_here\3do\cockpit\plane_name\
if I remember corretly. You put them to mods folder, not to sfs archives.
