Its dubbed in by movie makers. It isn't an in-game mod, just a film editing technique.

I don't know if everyone is aware of this or not.

If padlock views are on in mission, when you lock on enemy or friendly aircraft the head of your pilot will turn in that direction and follow the locked (padlocked) aircraft. I spotted this one time when I was reviewing a ntrk I had made inwhich I had locked on (padllocked) an enemy plane. Works with ground targets as well.

Also, enemy AI pilots heads will turn to follow you if they are engaged with you. At least until they can no longer see you from their cockpit.
