sfs extractor and how to open files ? - slipper - 15.08.2008

I have downloaded the sfs extractor, and extracted some of the files to have a look at. Some of the files i have opened with notepad, some contain English language whilst others contain a load of mixed up characters and symbols. Obviously i can alter the plain language files, but what program do i need to edit the other files?
