Correct me if I'm wrong, but the Spitfire didn't have staged flaps like many US and German aircraft had. It could be set at any angle the pilot wished. In game you can assign an axis to flaps, which simulates this. If not, you can only select full up or full down (i.e. landing)

No, the ingame representation of the Spitfire's flaps is wrong in at least two ways.
First, they only needed a very short time to deploy. Like Half a second or so. They literally banged in and out.
Second wrong thing is the ability to control the flaps on an axis. They were either full up or full down and were not meant for manouvering (considering the turning ability of the Spit, there is nothing wrong with that).
So through buttons-control the flaps are semi-right, only having full up or down, but deploy much too slow.
In fact being able to control them with an axis is kind of an exploit, they shouldn't be incrementally adjustable.
