I'm building a new map at the momnet & want to construct a small hillside dam in a gully on a map? Is there a technique to achieve this?

I've had some success with this actually by using concrete runway tiles, since they follow the slope of a river rather than just sitting on it at an angle.

So you use the runway tile to represent the dam wall because it slopes up the hill? can you get elevated waterbodies with water textures?

If you mean can you make rivers run up hills, yes you can if you just raise the ground level. The only problem with the technique is that the water will appear transparent from the other side from a low enough angle...
