As far as I know, the raw data for making maps for Sturmovik is downloaded from this site:
http://srtm.csi.cgiar.org/SELECTION/inputCoord.asp
and as you can see, for some reason neither the Arctic nor Antarctic are available ... don't know why, but there it is.
If there are other sites that offer similar geographical data, then I don't know about them.

Yeah, its a shame we cant make a decent Norway map with this SRTM data...
But we still have southern Chile fiords  ....

IIRC the radar "image" was made with a satellite, locked to the shuttle loading bay. AFAIK the shuttle doesn't do arctic/antarctic flyovers, so the radar scans didn't cover the poles.

I have found some files for antarctica and greenland.

That's because the Space Shuttle orbit did not pass over ther Poles. The SAR (Synthetic Aperture Radar) onboard of the Space Shuttle was used to make those maps.
SRTM = Shuttle Radar Topography Mission

Interesting for a mapmod would be the area around Southeast Greenland, Iceland, Jan Mayen, Spitzbergen, Bear-Isle and the Northwestpart of Norway for the convoi missions and the "weather-war" weather-stations in the North and the coalmines of Spitzbergen and the small airstripes. And offcourse the airbases at Iceland and Norway, Banak for example or perhaps the area of Narvik...
I mean This Area:
