Obvious to many, Im sure, but I was wondering how I take and save a screen shot from the game?

One of the simplest methods is to press the key 'PrtScr' on your keyboard.
On Qwerty keyboards it is usually just on top of the set 'delete' and 'insert'
This grabs the screen of your computer and copies it to your clipboard. This usually creates a .tga file in the root of your Il-2 game directory, giving you files like 'grab0000.tga' , 'grab0001.tga' etc ...
You can also have a graphics editor open - say Paint Shop Pro and probably GIMP I would guess. After pressing 'prtscr' you can then go to your open graphics editing program and press +v (paste) and you will get a screenshot, which you can then manipulate or save ...
BTW - when making screenshots in game, it often helps to freeze the action with key so that you can look for the best angle in F2 view ...

Would be nice to have a MOD for screen shots though and we all agree on that one,
simply press press press and check out our own dogfight or bombing mission from a designated folder

IIRC that was one of the first "hacks" or "mods" for IL2. Should still be around here, I guess.
