I have the elevation trim, aileron trim. But no Rudder trim?

The actual aircraft did not have them so the virtual ones don't either. When the power, pitch and airspeed are at optimum the aircraft will reach its own trim of sorts. This was set on the ground by mechanics for pilot preference or technical spec.

Sorry, keep your foot on the pedal like the the Luftwaffe men did...

The real planes did not have rudder trim. It was noted that rudder trim was something that would've made the 109 a better gun platform ... by the British team evaluating a captured 109.

True. Eric Brown said that having no rudder trim made the 109 pilot's life harder. You could take them to speed and throw off his shooting and force him to tread on the bar.
