I must be unusually dim, but where the blue blazes does one find the control to open the bomb bay doors?

the control is what ever you set to be 10% throttle... default is the 1 key (not on the num pad)

Actually, I believe '1' is assigned to 0% Throttle. 10% is unassigned by default.
