Damn, I've lost my notes on how to do this ie to change the default skin of aircraft!

I've done serches on this forum, but I can't find what I'm looking for!

Can someone please advise me of the steps to do this - as I recall it, one needs 3 "sizes" of the skin installed - got from running a mission?
