I read somewhere that the Luftwaffe used steel cartridges as brass was hard to come by. No effect on matters other than cosmetic spent cartridges for the purists.
I wouldn't exactly say no effect...
Steel cases can cause some reliability problems. They have to be lacquer coated, plated, or polymer coated, to prevent them from corroding. Lacquer coated cases can start to form a type of glue in the chamber, and this can occasionally glue a case into place. Steel cases also don't 'rebound' as well after firing. When a round is fired the case is pressed against the chamber walls by the pressure. After the pressure drops a brass case will tend to shrink a little bit away from the wall, but steel doesn't shrink as much. If there is a burr in the chamber, it might not hang up brass but it might hang a steel case in place.
I've had the unpleasant experience of getting a lacquered case glued into a Mauser and it was a B**** to get it out...
The 109 F-G-K series had a storage well under the breech of the nose cannon for collection the spent cartridges for later emptying.
I think there were also receiving bins for the cowling MGs but I am not sure as what I am thinking of may have been ejection chutes (opening to the outside world) rather than bins - I would have to check my collection of 109 stuff...

You sound like you reload your own ammo for your guns? I have a K98 myself, and also a swiss Schmidt-Rubin. The swiss ammo that I have used in the K31 is the Berdand and found it very difficult to reload for as we couldn't find an extrator. Anyhow back on subject: I am formilar with what you are talking about and that sounds very likely. Where the primers similar in larger caliber/cannon rounds as in hand held weapons.
How hard is it to add the cartrage ejection to existing plans?

This falls into the same genre as the tracer smoke. To do this you must edit a class file to get this effect. Which is not allowed.
But then the points are probably not set on the aircraft frame itself of where to eject the shells. So thats 2 things that need done, and one is not allowed.

So far I've had no need to reload for the rifles. And now I think you see what I mean about saving berdan brass? Check your PM box btw.
I have checked, and am now sure that Bf-109 fuselage weapons all emptied spent cartridges into internal storage bins for later removal.
Other aircraft I can't comment on at the moment...
