I always play with 100% difficulty but how do you tell your wingman or flight to attack a particular target (Air / Ground)
How do I select my target to begin with and then give my wingman the "Attack my Target" order?

You need padlock enabled for this command to work, just padlock your target, then order your wingman to attack it. Works for ground targets too.
