As for the high altitude clouds, it would be perhaps easier to achieve this with the weather set to allow thunderstorms, as Towering Cumulus can often get that high, as wtih Cumulonimbus clouds, which can often top 35,000 feet - both which are associated with thunderstorms. The higher altitude clouds, like Cirrocumulus, and cirrus is seemingly currently modeled, and that is from 20,000 to 40,000 - and are rather wispy, which would account for the hazzy misty stuff you have to break through at those heights.
