It is only partly realistic. Since in IL-2 no trim tabs are modelled, the whole control surface moves instead. This is of course totally unrealistic. There were trim tabs on the 109 that could only be adjusted on the ground, but whole rudder and ailerons were not.
Fortunately BoB will have trim tabs.
Oh yes and the Ta-183 is totally wrong, too. The elevator-looking like thing on its tail is actually the trim surfaces. The plane would have had elevons, the ailerons acting as both ailerons and elevators.
