Thanks to Fisneaky's discovery of the collection of different image files of the moon, as well as Hellzone's prodding , I took a look at the class files related to the moon, and was able to come up with a mod that will let you set different phases of the moon for a mission by setting a 'MoonPhase' parameter in the mission (.mis) file. Depending on the value you set the moon will be in different positions relative to the horizon, and will be in different phases (full-moon, half-moon, no moon, etc.).
