My vote is for TM Cougar. They are fairly cheep now. With a set of Saitek pedals, total cost is on par with a CH pro setup. I used CH stuff, gameport & usb, for years with no real complaints but I like the Cougar better.
The only real problems I had with CH was the pedals have very thin wires that break after awhile, and disassembling & reassembling the pedals to fix was a bitch  I quickly learned to set it on a simple jig to keep the pedals in place  1 or 2 button failures after a couple years
I have had the Cougar for a year with no problems. I like the heavy feel and the programing is next to none. You can use it in Windows mode and program in game, which is what I've done until I learned to program it. The dual stage trigger is very handy for mg and cannon 8) I set up a 1 button toggle for manual gear operation, I don't think I could handle flying the Wildcat without it!
I think any setup for a reasonable price is going to be wore out with heavy use in a couple 3 years, so I'll just have to see how the Cougar holds up. My brother has my usb CH setup that I used for several years. As far as I remember it was pretty well worn. but works ok.
Edit, to add another plus for Cougar, is it uses no cpu resorces where the CH stuff did.
