I have a 8800 GTS too, with 1G RAM, and a c2d 2.66.
I use forest=2, effects=1, and water=3, with all the smoke and planeshine, and such mods. It runs fine for me. no idea about the fps tho, I'm gonna check it at home. You should try Avala's conf settings for the other lines. (it's somewhere in the screenshots thread)
After, you should go to Nvidia control panel, and play with the settings. I googled on "8800 GTS setting il2/fsx", and I found some forums where people explained which setting is useful, and which is a useless fps killer.
