I think the reason the game doesn't simulate this, is because of limitations in the game engine, and that, in many planes, the wing is either on, or has lost at least 1/3 of it, which in most planes, is enough to bring upon an uncontrolled spin.

i heard of an F-15 losing a whole wing being able to return from a mission and land safely. is that possible?

Yes, it happened to an Israeli F15, and the makers sent a team out to find out how on earth the pilot got home safe and sound. In general, this sort of thing is usuallly disastrous.

In order to survive, the aeroplane needs to retain functioning controls, especially since it will be flying out of balance. Further, the loss of structure should not cause a catastrophic loss of control or sudden change in attitude, or the situation is probably unrecoverable. It would also demand a degree of skill and a cool head from the pilot.
