Some -certainly not all- aircraft have a gauge on the instrument panel showing more or less precisely which degree of flaps are deployed.
Other aircraft -some Spitfire and Hurricane models come to mind- only have two flap position settings by default: raised and lowered. Those two settings can be overcome in some cases by using a "slider" or wheel/rotary control to operate the flaps. "Gaming the game" (or more precisely "gaming the game's limitations") is often heard when one makes use of those non-standard or unintentional attributes in the game however.
