Set under "difficulty" on the "next" page:
"Cockpit Always On" to off. (Light out)

Then you have a cycle option to go through the "Superman" views (+ the cockpit view) and one of those has no gunsight or overlayed instruments. Don't know the key, been too many years since I used it.
