I don't know enough about the version-history of the IL-2 game to answer your question directly. I started to play it when Forgotten Battles came out. Back then, I had all dificulty settings turned off, except for "vulnerability." I don't remember encountering the problem you describe. When "torque and gyro effects" were turned off, they didn't appear in the game. Could it make a difference, what edition of a particular game version one uses? For example, could there be differences in game behaviour between a store-bought german or English version of IL-2, or a version purchased online?
Over the years, playing IL-2, I increased the difficulty level until I could play with all those difficulty settings that pertain to flight characteristics turned on. However, during this process I pretty much settled on flying mostly Axis planes. When I did fly a P-51 on occasion, I found that it was a rather unstable aircraft that needed to be handled with great care. I don't know if the flight characteristics of the P-51 are accurately modeled, but apparently with many aircraft, the game's modeling is said to be rather authentic and accurate. People who have actually flown P-51, decribed it as a "pilot's plane," easy to fly and forgiving in its handling. If this is correct, it would be quite a contrast to the P-51 in-game. However, I do believe, that most combat pilots are probably partial to the plane they have been trained on and that they have gotten used to. For example, Fw-190 pilots often expressed their preference for the Focke-Wulf over the Bf-109. At the same time, I have not found any account by a Bf-109 combat pilot, who didn't like the plane. So there you go, it's all rather subjective.
There is a book by Hans-Werner Lerche, titled "Testpilot auf Beuteflugzeugen." He was a German testpilot evaluating captured Allied aircraft. Perhaps you could try and find it. Would be interesting what he had to say about the P-51 and whether or not that matches the plane's performance in the game.
