Basically the difference between yours and the other one is that, they've painted in layers and also had a masking layer.
Masking Layer:
It uses a plain colour, pattern or gradient to block out all the areas that will not be mapped onto anything. (ie. you can't see it on the plane even if you paint colour there). This makes the skin look like they haven't painted over the lines so it is very neat.
Layers
They've probably painted in layers which means every section or colour is on a different layer. You can also block out mistakes by changing which layer is on top etc... Also makes it more flexible to edit one colour where they meet rather than having everything on one layer which is much more annoying. You can like paint a whole plane orange for example. Then paint the certain areas you want in blue and if you don't like it the layer can be moved, flipped etc until you think it's right. The masking layer is usually the layer at the top (it often includes the mechanical set, ie. wheels, propeller blades etc)
