The slipball in the screenshot you posted is pegged left. Either your leaning on the rudder, have trimmed the aircraft out of co-ordinated flight or your only giving power to the left engine.
The 262 modeling in game easily maintains 850kph true between 2km and 9km and doesnt start losing pieces untill well over 1000 kph.
Just remember the IL2 game engine wasnt intended to extend to high altitude and highspeed so it doesnt easily lend itself to the 262 flight envelope.
The 262 being capable of supersonic flight is generaly regarded as a myth based on ancedotal evidence from a single pilot. Post war engineering analysis ( including testing by Willy Messerschmitt ) concluded the airframe wasnt strong enough to withstand the transonic buffeting not to mention the engine inlet design wasnt capable of feeding the engines at transonic/supersonic speed limiting the speed of the design to about mach .85.
