Before editing the cockpit mesh, have you tried the Combined 109 Cockpits Pack? Der Wurstenfuch and I have changed many features and in particular fixed up many of the bugs surrounding the Erla Haube (which from what I gather you are editing?)

As for POV, there is a POV mod floating around at SAS (www.sas1946.com) or you could simply open the mesh up in a text editor and move the position of the CAMERA hook.
