an option to turn it off would be ok. however, while not as visible as in game (it IS a game after all and naturally not perfect) you 'can' see the propeller in the front seat of a WW2 plane/ or any prop plane. it's not like in the game, true, but it's there. it does depend on the surrounding air/light to a large degree but it's not like it's one hundred percent invisible either. even when it's not showing much at all there's still a sort of perceptible 'blur' and disturbance that is faintly visible to the eye and lets you know that 'something' is going on up there.
how do 'i' know? well, though i no longer fly, i was a pilot for many years. (shrugs)
but as you say, an option to turn it off wouldn't be a big deal if someone wants to and has the time to make the off/on switch.
