Welcome back here!
I recommend HSFX 4.1 or 4.11 for offline flying and mods collecting. You sound like a person who collects mods individually and some of the mod packs out there are just too large, frankly, in my humble opinion. If you want everything in the whole world including the kitchen sink and the toilet ( :lol: ), then a huge mod pack is for you.
For online flying, I highly recommend joining an online squadron and using the mod pack that they use. Go to Announcements Forum and look for the Sticky called Squadron List ( Community Generated ). Each squadron name is a link to their website.
Also, I recommend one mod pack for online use and at least a separate copy for offline mods collecting. It would be a great idea to try a couple different mod packs. HSFX 4.1 has the UI 1.1, UI 1.2, beta UI 1.2.5, SAS mods, SFX mods, IL-2 file system, and a bunch more! The JSGME Mods Enabler makes adding and managing mods to be a SNAP!
