I have Saitek X52 and was having heaps of problems with spikes and having it re-calibrate itself crooked halfway through a dogfight. One thing that made a big difference was getting a powered USB hub + turning the pretty blue lights right down, and always checking control panel/game controllers/saitek x52, properties before cranking up IL2 to look for spiking and wrong calibration. If I check it and input isn't smooth or controls won't go the full movement I just unplug it from the powered hub, wait a second and plug it back in again and it's all good to go.
