Here is my guide on the official IL-2 1946 patches in order with links:

Bomberflieger, as a suggestion since you want to collect the unflyables, if you get into making your own missions and campaigns then you can potentially see any of the "flyable" planes in your missions as artificial intelligence piloted aircraft. There are many aeroplanes in total. If you include all the modded planes, then you're looking at 450 - 500 aircraft or more.
