You have to edit hier.him for your plane, like this for example:

Adding "//" will make that the game will not load the pilot .msh file, i think if you add " Hidden" after "Parent CF_D0" will also make your pilot invisible but I'm not 100% sure
maybe if your plane/pilot get damages your pilot will be visible again, there are 2 pilots msh files which loads when you see your plane from outside view one is alive msh Pilot1_D0 (visible) and
the other one Pilot1_D1 is the dead pilot msh file but "Hidden" by game, when your pilot is dead the game will hide the alive msh and the dead msh will be visible, there for i'm not sure adding
" Hidden" after Parent CF_D0 will work! you have to test and see which one works!
