Question 1:
Be it "Quick Mission Builder" or hosting an online game, you'll always have the "Difficulty" button to use. Press it, jump to page 2 and look up
the very last setting, called "No Speedbar". If it's light is on, you'll only see your course in the HUD. Switch it off and you'll have speed & height back.
Question 2:
Start game -> "Controls" -> scroll down and find "Toggle Speed Bar" -> if no key assigned, assign one -> remember -> use and cycle thru settings.
Thus you switch between - km/h // KIAS // mph // off -
