Here's a trick I worked out years ago before I got rudder pedals. It's a clunky solution and works best if you're only going to fly one type of plane on any given day.

Before firing up Il2 go into the joystick calibration application. Go through the calibration and when you get the "Set z-axis centre" or wording to that effect, twist the joystick the amount you normally hold to the opposite side. If you hold 10 degrees left rudder in the game, then hold 10 degrees right twist in the calibration and hit OK to set the calibration. The joystick will now be offset to the left. Go into the game and you now have rudder offset. Like I said - it's clunky but I got away with that for over a year before I broke down and got pedals. And come to think of it, I've used this method for the rudder pedals but now I mostly fly planes with trim in at least two axis.
