Pitching of bf-109z works when both elevators are removed and pitching and yawing of mxy7 works when tail is removed.

I believe that - and you'll have to take my word on this for a little while until I can find the book again - in E. Rickenbacker's "Fighting the Flying Circus", a pilot (I forget who) loses a great deal of canvas from his upper wing on a Nieuport biplane, and successfully "nurses [his] poor bus" back to the airfield, but he does note that every move he made with the stick felt way too effective, likely due to the slightest bank negating what little lift the lower surface was providing. Just something to think about; I'll look for the book so I can quote it directly for you.

As for Il-2 - well, I admit that I've seen some rather odd things happen when planes lose control surfaces or entire wings/elevators/tail planes. Such as the bizarre tumbling effect that occurs on somehow otherwise-intact aircraft that have been severed mid-fuselage; an average airframe would, I feel, be unlikely to withstand such motions due to air resistance and general forces being applied in so many directions.

A typical aeroplane severed mid-fuselage would very likely tumble, a spin of some sort may well result, because the airframe no longer has the stabilising rear surfaces. There's no reason why the aircraft would break up without any further damage applied.
