I was wondering, what is the best 3d modeling program?? for changing planes or something like that?

but how do i make or convert normal plane files into ''max'' files??

I use it and rhinoceros.

Is 3DS max 6 OK for IL2 also? I'd like to get started in this and thats the version I have....

I think you can use almost every 3D software for IL2. Converting 3d models to il2 and making the flight model is the harder part
